  1. Add bok choy to pot of boiling, salted water; cook, 1 1/2 min, until tender. Drain well.
     
  2. Heat wok on LOW. Add peanut oil, garlic, and ginger; cook, stirring, until fragrant. Add mushrooms; increase heat to HIGH. Cook, stirring, about 2-3 min, until softened.
     
  3. Add oyster sauce and water to pan; stir to combine. Reduce heat to LOW; cook 1 min. Remove from heat; set aside. Arrange bok choy on platter; drizzle with mushroom sauce. 
Chef Tips
  • Recipe can be made the day before, then reheated prior to serving. Keep sauce separate prior to reheating.
  • Try to purchase the smallest bok choy you can find, with tight leaves.
