  1. Heat olive oil in large saucepan on MED-HIGH until oil faintly smokes. Add vegetable-bean mix; cook 5-8 min., stirring often.  Add rice, tomatoes, water, and salt; bring to a boil. 
     
  2. Reduce heat to LOW. Cover, cook 10 min.  Remove from heat; let stand covered 5 min.
Chef Tips
For added "heat," sprinkle with red pepper flakes.
