  1. Place butternut squash noodles in large bowl; sprinkle evenly with 1/2 tsp salt. Let rest about 10 min at room temp.
     
  2. Transfer noodles gently into colander (do not rinse). Squeeze lightly using paper towel; pat dry.
     
  3. Whisk together soy sauce, sugar, lime juice, remaining salt, and garlic paste; set aside. 
     
  4. Heat grapeseed oil in stir-fry pan on MED until oil faintly smokes. Add Spanish onions and curry powder; cook, stirring frequently, about 2 min until onions soften. Add peppers; cook, stirring, 1 min. Add butternut squash noodles and snow peas; cook, stirring, 2-3 min until butternut squash noodles soften. Add sauce mixture, chili oil, and green onions; toss to combine.
     
  5. Transfer to serving platter; garnish with chopped green onions.
