  1. Heat basting oil in braising pan on MEDIUM-HIGH until oil faintly smokes. Add fennel. Reduce heat to MEDIUM and cook, stirring occasionally, about 5 min, until softened but not browned.
  2. Add one package of spinach; season to taste with salt and pepper. Cook, stirring, about 1 min, until wilted. Add second bag of spinach; cook, stirring, about 1 min, until wilted. Season to taste with salt and pepper.
