Braising Pan


  1. Melt butter in pan on LOW. Adjust heat to MEDIUM. Add onion. Cook, stirring, 4-5 min, until soft.
  2. Adjust heat to HIGH; add cabbage. Cook 2-5 min, stirring frequently to prevent over-browning. Reduce heat to MEDIUM-LOW. Cook, stirring frequently, 15 min. Season to taste with salt and pepper. Chill about 45 min in refrigerator.  
  3. Center about 1 Tbsp cabbage mixture on each prepared circle of pierogi dough.
Render 4 strips Applewood Smoked Bacon, cut in 1/8-inch strips in pan prior to step 1. Remove bacon to separate platter. Use 1 Tbsp of bacon fat, along with 1 Tbsp butter in step 1. Continue with recipe, adding cooked bacon at end.
