  1. Preheat oven to 450 degrees. Toss cauliflower and 2 Tbsp basting oil in large bowl; season with salt and pepper. Arrange in single layer on parchment paper-lined baking sheet.
     
  2. Toss fennel and carrots with remaining basting oil in large bowl; season with salt and pepper. Arrange in single layer on separate parchment paper-lined baking sheet.
     
  3. Roast fennel, carrots, and cauliflower, about 15 min, until fennel and carrots are tender, turning once halfway through. Remove fennel and carrots; set aside. Continue roasting cauliflower, about 5 min, until tender.
     
  4. Combine fennel, carrots, and cauliflower in large bowl; drizzle with melted finishing butter. Add pumpkin seeds and lemon zest; toss to combine.
