Directions

  1. Preheat oven to 450 degrees. Cut off and discard leaves from beets; leaving about 1 inch of stems; do not peel. Arrange beets in shallow roasting pan; season with salt and pepper.
     
  2. Roast about 1 hour 15 min, until easily pierced with tip of paring knife. Cool.
     
  3. Trim and discard root and stem ends; peel and dice beets. Toss with onion, oil, and vinegar. Season with salt and pepper.
     
  4. Beat together goat cheese and heavy cream with electric mixer to soften and blend, about 1 min. Fold in chives; season with salt and pepper.
     
  5. To serve, spoon about 1/2 cup beets onto center of each plate, top with spoonful of goat cheese mousse, and sprinkle with candied walnuts.
Chef Tips
Both beets and Goat Cheese Mousse can be made ahead and refrigerated until ready to serve.
If you’re roasting veggies with other items in the same oven, you may have to adjust veggie cooking time.
