  1. Preheat oven to 450 degrees. Add lemon juice to large bowl of water. Cut stems from artichokes. Peel off outer leaves until light green/yellow-colored leaves appear. Cut off top third of each artichoke; trim off any remaining green from base. Cut trimmed artichokes in half, placing each one in lemon water to prevent darkening.
     
  2. Drain well. Toss potatoes, artichokes, and basting oil in large bowl. Arrange in single layer on parchment paper-lined baking sheet.
     
  3. Roast, 20-25 min, until tender and browned.
Chef Tips
  • If baby artichokes are not available, thaw 1 bag (12 oz) Italian Classic Halves and Quarters Artichoke Hearts (Frozen Dept)
  • If you're roasting veggies with other items in the same oven, you may have to adjust veggie cooking time.
