Make This First


  1. Add stock and wine to saucepot; bring to simmer on MED-HIGH.
  2. Heat basting oil in skillet on MED, until oil faintly smokes. Add onions and cook, stirring frequently, 2-3 min, until soft but not brown. Add rice; cook and stir 2 min. Stir in 4 Tbsp Squash Puree.
  3. Add one-third of the simmering stock, constantly stirring with wooden spoon. Continue cooking until all liquid is absorbed. Repeat twice, adding one-third of the stock and stirring constantly until stock is absorbed and mixture is creamy after each addition.
  4. Stir in remaining Squash Puree. Stir in cheese; season with salt and pepper.
Season with desired flavors. Excellent finishes are: Food You Feel Good About Pumpkin Seed Oil, cinnamon, nutmeg, ginger, grated cheese, or basting oil.
