Potato masher or ricer

Directions

  1. Place potatoes in medium pot; cover with cold water. Cook on MEDIUM-HIGH 8-10 min, until soft.
     
  2. Drain potatoes; transfer to large bowl. Mash with potato masher or ricer. Mix in shredded cheese, making sure cheese is thoroughly incorporated. Season to taste with salt and pepper. Chill 45 min in refrigerator.  
     
  3. Center about 2 1/2 tsp potato mixture on each piece of cut dough.
