  1. Blanch asparagus, red pepper, zucchini, and goldbar squash in pot of boiling, salted water 30 seconds. Drain; transfer to bowl of ice water. Drain well; blot with paper towels to remove excess moisture.
     
  2. Add blanched veggies, cucumber, corn, and tomatoes to bowl; toss with dressing. Season with salt and pepper. Chill 1-2 hours.
     
  3. Using a slotted spoon, arrange veggies around sides of serving dish. Mound mache in center and drizzle with dressing that remained in bowl.
Chef Tips
  • For more tangy zip, add juice from 1-3 limes to dressing
  • Any baby lettuce can be used in place of mache
  • Frozen corn can be used when fresh is unavailable
  • Before chilling, place plastic wrap directly on top of vegetables to lessen air exposure while marinating
