Directions

  1. Heat olive oil, garlic, and anchovy on MED-LOW. Cook, stirring, 2-3 min, until anchovy fillet is dissolved. 
     
  2. Raise heat to HIGH. Add cauliflower, water, and salt; stir. Bring to a simmer; cover. Cook, stirring occasionally, about 10 min or until water is evaporated. Season with pepper.
Options
  • Add 1/2 tsp crushed red pepper flakes.
  • For a more pronounced anchovy flavor, use 2 anchovy fillets.
  • Vegetarian option: 1 1/2 tsp capers or 1 1/2 tsp kalamata olive tapanade in place of anchovy.
