Preheat oven to 275 degrees.

  1. Drizzle tomatoes with olive oil; season to taste with salt and pepper.
  2. Arrange tomatoes in single layer on parchment paper-lined baking sheet. Roast 2 hours until tomatoes are dry, but still pliable.
