Mushroom Duxelles

Braising pan, food processor.

Directions

  1. Chop mushrooms very fine in food processor, almost to a paste.
     
  2. Heat oil in braising pan on MED. Add onions and garlic. Cook, stirring occasionally, 5 min, until onions are softened, but not browned.
     
  3. Add mushrooms; season with salt and pepper. Cook, stirring often, 25-30 min, until all water is cooked out of the vegetables. Stir in thyme and truffle oil. Refrigerate at least 4 hours (to overnight).
Chef Tips
  • Chop mushrooms in food processor in two batches.
  • Use 1/2 pkg Food You Feel Good About Cleaned & Cut Onions in place of the half onion.
  • Great to make day before serving.
