Kale with Caramelized Shallots

Ingredients

Directions

  1. Bring pot of salted water to boiling on HIGH; add kale and blanch 2-3 min. Drain. Shock (to stop cooking process) by transferring to bowl of ice water; drain and set aside.
     
  2. Place oil and shallots in large saute pan. Cook on MED, stirring occasionally, 5-8 min, until shallots are caramelized and golden brown.
     
  3. Add kale and stock to same saute pan. Cook on MED, 3-5 min, until tender and heated through. Add basting oil; mix well and cook 1-2 min. Remove from heat and serve.
