Directions

  1.  Day prior: Sort beans for stones and warped/discolored beans. Place beans in braising pan. Add 6 cups water. Cover, tilted to vent. Soak overnight.
     
  2. Next day: Drain existing water from beans. Add 8 cups fresh water and bay leaf to beans in pan. Bring to a simmer on MED; reduce heat to LOW. Cover, tilting to vent steam.
     
  3. Cook beans until tender, about 90 min. If beans are not completely tender, cover completely and cook additional 15 min or as needed. Drain, discard bay leaf, and set aside.
     
  4. Cook bacon in braising pan on MED about 4 min, until slightly brown but not crispy. Add sofrito to pan on MED-HIGH; cook 5-7 min until caramelized. Add chicken stock; stir to deglaze pan. Add beans and season with salt. Bring mixture to a boil.  Reduce heat to MED-LOW; cook 20-30 min until liquid is reduced by half.

To test beans for doneness, taste one of the smaller beans to ensure that it is tender and cooked through.
