  1. Cook bacon in 3-4 qt sauce pan, stirring, on HIGH until just crisp.
     
  2. Reduce heat to MEDIUM. Add onions, thyme, and jalapeno. Cook, stirring, about 2 min. Stir in broth and rice; cover and simmer about 15 min, until rice is tender.
     
  3. Stir in black-eyed peas; cook, covered, about 5 min. Season to taste with salt and pepper.
Options
For hotter flavor, stir in additional crushed red pepper flakes to taste.
