  1. Preheat grill on MED. Coat cleaned grill grate lightly with vegetable oil. Drizzle eggplant, zucchini, and pepper with basting oil.
     
  2. Grill veggies, turning every 1-2 min, until both sides are grill-marked and veggies are knife-tender, 10-12 min.
