  1. Blanch green beans 2-3 min in large pot of boiling, salted water. Drain; transfer to bowl of ice water. Drain and set aside.
     
  2. Heat basting oil in skillet on MED-HIGH. Add mushrooms; cook, stirring, 2 min. Add shallots; cook, stirring, 1 min. Add wine; cook, stirring, about 5 min, to reduce by half. Stir in oregano.
     
  3. Add green beans; season with salt and pepper. Heat through; add lemon zest and juice. Serve immediately.
 
Chef Tips
Add lemon zest and juice at the end of the cooking time as they will change color of beans.
