  1. Add potatoes to stockpot; cover with cold, salted water. Bring to a boil on HIGH; reduce heat to MED. Cover and simmer potatoes about 15 min, until tender when pierced with knife tip. Drain; return to stockpot. Heat on LOW 3-5 min, tossing gently, to remove excess moisture. Remove from heat; let rest 10 min. 
      
  2. As potatoes cook, add 3 cups cold water and garlic to separate pan on MED-HIGH; bring to boil. Cook 1 min; drain. Repeat garlic cooking process 2 more times with fresh water each time (this will sweeten and soften garlic). Puree garlic in food processor; set aside. 
     
  3. Add butter and half & half to small saucepan on LOW; warm about 5 min, until melted.
     
  4. Add melted butter mixture and pureed garlic to stockpot; stir to combine. Smash potatoes to desired consistency; season with salt and pepper. Transfer potatoes to serving bowl.
