  1. Preheat oven to 350 degrees. Arrange slices of beets in 3-qt pan. Drizzle basting oil over beets; toss to combine. Add 1/3 cup of water to bottom of pan; cover. 
      
  2. Roast 30 min. Rinse reserved beet greens. Remove stems; cut leaves into bite-size pieces. Set aside.
       
  3. Remove beets from oven; fold in one-third of beet leaves. Return to oven; roast 10 min. Repeat this step 2 times until all leaves are folded in and beets are fork-tender.
       
  4. Remove from oven. Squeeze lemon over dish; season with salt and pepper.
Chef Tips
If using multi-color organic beets from the Wegmans Organic Farm, you may want to use 2 bunches since these varieties are a bit smaller.
