Cider-Glazed Roasted Carrots with Pumpkin Seeds

  1. Preheat oven to 450 degrees. Toss carrots and basting oil in large bowl; season with salt and pepper. Arrange in single layer on parchment paper-lined baking sheet.
      
  2. Roast, 20 min, until tender. Remove from oven; set aside.
       
  3. Heat cider and honey in large saucepan on MED-HIGH; stir to combine. Bring to boil. Cook, stirring, about 10 min, until liquid is a syrupy consistency and mixture has reduced by half.
     
  4. Remove pan from heat. Add lemon dill butter; stir to combine. Add carrots to pan; stir to combine. Season with salt and pepper; sprinkle with pumpkin seeds.
Chef Tips
To make ahead: Roast carrots; let cool and refrigerate. Prepare glaze; let cool and refrigerate. To serve: Warm glaze in large skillet on MED; stir in roasted carrots to warm through. Sprinkle with pumpkin seeds.
