Directions

  1. Preheat oven to 375 degrees. Add eggs, cauliflower, cheese, salt, and pepper to large bowl; stir to combine. Set aside.
     
  2. Add milk to large saucepan; bring to boil on HIGH. Boil 1 min; reduce heat to MED. Whisk in cornmeal; cook, stirring, 2 min.
     
  3. Whisk 1/2 cup cornmeal mixture into egg mixture; mix well. Stir in remaining cornmeal mixture until well combined.
     
  4. Spray 8x8-inch baking dish with cooking spray. Add mixture to dish; dot with finishing butter. Bake, about 40 min, until center is set and edges are lightly browned.
