  1. Heat 1 Tbsp oil in large saute pan on MED; add squash. Cook, stirring, 7-10 min until tender. Remove from pan; set aside.
     
  2. Add remaining oil to pan. Add onions; cook, stirring, 2-3 min. Stir in sugar. Add cabbage; cook, stirring, 2-3 min until slightly wilted. Add red pepper; saute 1-2 min.
     
  3. Fold in squash. Add vinegar; season with salt and pepper. Cook, stirring, 5 min until greens are wilted and squash is warmed through.
