  1. Preheat oven to 450 degrees. Toss squash and 2 Tbsp basting oil in large bowl; season with salt and pepper. Arrange squash in single layer on large parchment paper-lined baking sheet. Roast, 25-30 min, turning halfway through, until browned and tender. Remove from oven. Let rest until cool enough to handle, about 10 min.
     
  2. Reduce oven to 350 degrees. Add squash and 1 cup parmesan cream sauce to large bowl; toss to coat. Pour mixture evenly into casserole dish.
     
  3. Add apples and 1 cup parmesan cream sauce to bowl; toss to coat. Top squash mixture with layer of apple mixture. Gently press apples down with spatula. Season with salt and pepper. Pour remainder of sauce over apples. Bake 30 min until apples are tender; remove from oven. Top with gruyere.
     
  4. Preheat oven to BROIL. Combine 1 Tbsp basting oil and panko in bowl; sprinkle evenly over cheese. Return to oven; broil 2-3 min, until cheese melts and topping browns. Remove from oven. Let rest 10 min before serving.
