  1. Add quinoa, water, and 1/2 tsp salt to small saucepan on LOW. Simmer, uncovered, about 20 min until water is absorbed and grains are tender. Remove from heat; let cool.
     
  2. Place beet noodles in large bowl; sprinkle evenly with 1/2 tsp salt. Let rest about 15 min at room temp.
     
  3. Transfer beet noodles gently into colander (do not rinse). Squeeze lightly using paper towel; pat dry. Transfer beet noodles to cutting board; cut into 1 1/2-inch pieces.
     
  4. Whisk together vinegar, truffle honey, oil, remaining salt, and pepper in large bowl. Add beet noodles; toss to combine. Let sit 10 min. Add super greens; toss to combine. 
     
  5. Transfer to serving platter; top with quinoa and pistachios. Serve with cheese slices.
