  1. Preheat oven to 400 degrees. Spread 1 Tbsp basting oil over bottom of casserole dish.
     
  2. Add olive oil to large pan. Add pancetta; heat on LOW, stirring occasionally, 10-15 min. Add onions; cook, stirring occasionally, 7-10 min, until translucent. Add artichokes; cook, stirring, 3-5 min. Add half pkg kale; cook and stir until wilted. Add rest of kale. Cook, stirring, about 15 min, until all is wilted.
     
  3. Season with salt and pepper; stir in cream sauce. Spread mixture in casserole dish. Bake 20 min until bubbling. 
     
  4. Remove from oven; top with tomatoes and cheese. Return to oven; bake 10 min until cheese melts.
Chef Tips
  • Can be made a day ahead. Prepare up until baking; cover and chill. Day of serving, bake about 45 min; continue with recipe.
