  1. Squeeze juice from lemon; combine juice and lemon rinds with stock in large mixing bowl. Add artichokes, making sure cut sides are submerged in liquid.
     
  2. Heat basting oil in large stockpot on MED-HIGH; add mirepoix, leek, and garlic. Cook, stirring, 2-3 min, until soft but not browned.
     
  3. Remove artichokes from stock (save stock) and add to stockpot; discard lemon rinds. Add wine, herbes, and bay leaves to stockpot. Season with salt and pepper. Cook 5 min, stirring, until reduced to almost dry. Add stock; cover and bring to a boil. Reduce heat to MED-LOW.
     
  4. Cook, 20-25 min, until artichokes are fork-tender. Drain broth from artichoke mixture and serve with artichokes.

Chef Tips
If desired, prepare ahead and chill. Reheat just before serving.
