Large nonstick skillet, box grater, ice cream scoop

Directions

  1. Combine yam, apple, and onion in large bowl. Add sour cream and eggs; season with salt and white pepper. Mix well; slowly fold in flour. Stir in almonds; mix well. Scoop up mixture with ice cream scoop (about 1/2 cup) and form patties with hands. Set aside. 
     
  2. Heat oil in large skillet on MED-HIGH, 1-2 min, don't let oil come to smoking point. Reduce heat to MED.  
      
  3. Add patties to pan (about 5 at a time). Cook 7-8 min until edges begin to brown. Gently flip patties; cook 5-6 min until browned and tender. Drain on double thickness paper towels.
     
  4. Repeat with remaining patties, heating additional vegetable oil if needed.

 

Chef Tips
  • Can be made a few hours ahead and reheated in a 350 degree oven for 20 min.
  • Serve with sour cream.
