Directions

  1. Heat oil in pan on MED-LOW. Add onion; cook, stirring, 5-7 min, until soft but not browned. Add jalapenos; cook, stirring, 4-5 min, until tender. Add zucchini; cook, stirring, about 10 min, until tender. 
      
  2. Add chicken stock. Increase heat to MED-HIGH. Bring to a simmer; cook 10 min. Remove from heat; let cool slightly.
     
  3. Transfer to blender; puree until smooth. Add jalapeno seeds to your personal heat preference and blend. Season with salt and pepper; garnish with cilantro leaves.
Chef Tips
  • Peel the zucchini rind in candy-cane strips; leave some rind on for good color in the soup.
  • For a vegan option use Better Than Bouillon instead of chicken stock and add 1 tsp A. Vogel Herbamare Herb Seasoning Salt.
