  1. Add oil and vegetables to stock pot on MED-HIGH; cook, stirring occasionally, about 5 min, until vegetables are soft but not browned. Add broth; bring to boil on HIGH. Reduce heat; simmer 30-40 min.
     
  2. Carefully puree soup with hand blender in pot until smooth. Season with salt and pepper. Add nutmeg; stir.
     
  3. Remove from heat. Temper heavy cream (pour cream into bowl; slowly add 2 cups of hot soup to warm cream). Stir this mixture back into soup pot. Add spinach just before serving; garnish with thyme.
