Tuscan Soup with Sausage Meatballs

  1. Heat oil in stockpot on MED. Add sausage balls; cook, turning to brown all sides, about 5 min. Add garlic, rice, and escarole; stir. Cover; cook, about 5 min, until escarole is tender.
     
  2. Add stock. Increase heat to HIGH; bring to boil. Reduce heat to MED-LOW. Simmer, covered, about 15 min, until sausage is cooked through and rice is tender. Add whole and crushed cannellini beans; stir. Season with salt and pepper. Heat to until desired temp is reached.
