Small cheesecloth, kitchen string

Directions

  1. Break turkey carcass apart; add to large stockpot. Add water and mirepoix; bring to simmer on MED-LOW. Cook, simmering, 1 hour.
      
  2. Place thyme, peppercorns, and bay leaves in center of cheesecloth; draw up edges to create a small pouch and fasten with string. Add pouch to stockpot; cover, simmer, 30 min.
     
  3. Strain liquid for use. Discard carcass, vegetables, and seasoning pouch.
