  1. Heat oil in stockpot on MED. Add garlic. Cook 3-4 min, stirring constantly, until garlic is well-browned.
     
  2. Add Thai stock. Stir in ginger, celery, fish sauce, and lime juice. Bring to rapid simmer. Cook, stirring occasionally, 3-5 min.
     
  3. Add chicken and rice. Simmer 4-5 min, until chicken reaches internal temp of 165 degrees (check by inserting thermometer into one of the thicker chicken pieces). Add green onion. Transfer to warmed bowls; garnish with cilantro.
