  1. Add stock to pot on HIGH. Add celery, onions, and leeks. Stir to combine. Bring to simmer; reduce heat to MED. Cook 5 min.  
     
  2. Add curry sauce, carrots, chicken, and rice. Cook, stirring occasionally, about 10 min. 
     
  3. Remove from heat; stir in soy sauce.
