  1. Combine squash, onions, and garlic in stockpot with 1 cup water. Cover and cook on MED until squash is tender, about 30 min. Add 2 cups stock.
     
  2. Puree, using stick blender, until smooth. Stir in lemon juice and cumin. Add leeks and remaining 2 cups stock. Simmer 10 min, stirring occasionally, until leeks are tender. Stir in cilantro. Season with salt and pepper.
     
  3. Top each serving with dollop of yogurt.
