Directions

  1. Trim and discard fat from pork chops. Cut meat into 1/4-inch dice; set aside. 
     
  2. Add oil to heavy-bottomed stockpot on MED. Cook mirepoix and garlic, stirring occasionally, about 5 min, until vegetables are tender but not browned. Add peas, potatoes, stock, bay leaf, and reserved bones. Bring to boil. Reduce heat and simmer about 45 min, covered, until peas are tender.
     Remove bay leaf and bones. Puree soup until smooth with blender. If using standard blender, return soup to pan.
     
  3. Season with salt and pepper. Add diced pork. Heat on MED until warmed through. Garnish with parsley.
Chef Tips
  • No pork chop? Use leftover ham bone for flavor and 2 cups chopped ham.
  • If using a standard blender, allow soup to cool for 15 min before pureeing and never fill the blender more than 1/3 full. Puree in batches and leave the lid slightly ajar to allow steam to escape.
