  1. Preheat oven to 350 degrees. Toss pumpkin with basting oil in large bowl; season with salt and pepper. Arrange in single layer, flesh-side up, on parchment paper-lined baking sheet.
     
  2. Roast about 25 min until flesh is soft. Scrape flesh from peel; set aside. 
     
  3. Melt butter in stockpot on MED. Add celery, onions, and apples; stir to combine. Raise heat to MED-HIGH; season with salt and pepper. Cook, stirring, 6-8 min until slightly caramelized.
     
  4. Stir in honey, ground cloves, cinnamon, vanilla, bay leaves, thyme, and pumpkin. Add flour; stir and cook 1 min. Add stock and cider; stir. Bring to boil on MED-HIGH. Reduce heat to LOW; simmer 30 min. Discard bay leaves.
     
  5. Puree mixture using stick blender until smooth. Stir in cream.
     
  6. Serve; garnish with pumpkin seed oil and creme fraiche.

 

Chef Tips
For an extra-creamy texture, puree soup again after adding cream.
