  1. Rehydrate mushrooms in water for 1 hour. Drain mushrooms, reserving liquid. Roughly chop.
  2. Make roux: Melt butter in small saucepan on MED-LOW. Add flour; stir with wooden spoon. Cook 35-40 min, stirring frequently, until roux color resembles peanut butter. Remove from heat. (Roux will keep cooking even after removing from heat.)
  3. Add mushrooms, reserved liquid, and onion to stockpot on HIGH. Bring to boil. Reduce heat to LOW. Simmer uncovered 1 hour. Remove onion and discard.
  4. Add sauerkraut juice. Season with salt and pepper. Bring back to a boil. Add  roux. Bring to a boil. Cook about 5 min until soup is thick enough to coat back of spoon.


Chef Tips
For a more sour taste, add white vinegar.
