  1. Heat oil in stockpot on MED-HIGH. Add mirepoix and garlic; cook, stirring, 2 min. Stir in soup vegetables; cook 1 min. Add beans and chicken broth; bring to a simmer. Cook, stirring occasionally, about 25 min, until potatoes are tender.
     
  2. Add shrimp, stir. Add spinach and thyme. Cook, stirring, 2-3 min until internal temp of shrimp reaches 130 degrees (check by inserting thermometer into thickest part of shrimp). Let rest at least 2 min. Season with salt and pepper.
