  1. Heat oil in stockpot on MED-LOW. Add soup vegetables; cook 5 min, stirring frequently.
     
  2. Add broth; bring to boil. Reduce heat and simmer, uncovered, 15-20 min, until potatoes are tender.
     
  3. Ladle small batches (about 2 cups at a time) into blender; puree until smooth. Return soup to pot; reheat on LOW. Stir in cream. Season with salt and pepper.
Chef Tips
  • If preferred, use an immersion (hand-held stick) blender and puree in pot.
  • Wegmans Heavy Cream can be replaced with Wegmans Half and Half.
  • For extra richness, add 2 Tbsp creme fraiche to soup, stirring until dissolved.
  • Garnish with chopped chives and Food You Feel Good About Pumpkin Seed Oil.
