Miso Squash Soup

Directions

  1. Add onions, sesame oil, and salt to large pan on MED-HIGH. Cook about 4 min, until onions start to brown and wilt.
     
  2. Add squash on top of onions. Add water; bring to boil on HIGH.
     
  3. Lower heat to MED-LOW and cover. Simmer about 30 min, until all vegetables are very soft. Carefully puree in food processor or blender in small batches. Return to pan.  
     
  4. Dissolve miso in the cold water. Stir into squash mixture: cook 1-2 min to activate miso.
      
  5. Sprinkle with salt and pepper. Stir in 1-2 Tbsp of maple syrup for additional sweetness, if desired. Garnish with green onions.
