  1. Add leeks and olive oil to stockpot on MEDIUM-LOW. Cook, stirring, about 10 min, until leeks are soft and translucent but not browned.
     
  2. Add stock; season to taste with salt and pepper.
     
  3. Bring to boil on HIGH. Reduce heat; simmer about 10 min until leeks are fork-tender.
     
  4. Season to taste with herb seasoning salt. Ladle into warm bowls.
