Gluten-Free Slow-Cooked Beef Minestrone




  1. Heat oil in large braising pan on MED-HIGH until oil faintly smokes. Dust beef with flour; pat off excess. Add beef. Sear, about 10 min, until all sides are browned.
  2. Transfer beef to slow cooker, leaving liquid in pan. Add vegetables to pan with liquid; season with salt and pepper. Cook, stirring, 3 min. Add to slow cooker.
  3. Add stock, tomatoes, and sauce to slow cooker. Cover; cook on HIGH 4 1/2-6 hours or LOW 8-10 hours.
  4. Add dry pasta and beans 10 min before end of cooking on HIGH; 15 min before end of cooking on LOW. Add spinach to slow cooker. Stir, about 2 min, until spinach slightly wilts.
