Ingredients

Directions

  1. Add oil to stockpot on MEDIUM; add diced sirloin. Cook, stirring, 2-3 min until brown. Add soup vegetables and garlic. Cook, stirring, 6-8 min, until some of the vegetables begin to soften. Add water and bouillon cubes; bring to simmer. Cook 15-20 min, until carrots and potatoes are fork-tender.
     
  2. Add spinach and chopped dill. Season to taste with salt and pepper.
Chef Tips
In place of sirloin, substitute 8 oz Wegmans chicken-garlic sausage or 8 oz extra-firm tofu, drained and diced. 8 oz fully cooked kielbasa can be added in step 2 with spinach and dill, if desired.
Options
  • Garnish with beets(see recipe link), creme fraiche, sliced hard-boiled eggs. Snipped fresh dill.
     
  • Serve with Multigrain Bread.
