Stockpot, six 14 oz oven-proof soup crocks

Directions

  1. Heat stockpot on MED-HIGH. Add olive oil and onions; cook, stirring, 6-8 min until onions begin to brown.  Reduce heat to MED. 
     
  2. Add garlic, cook, stirring 3-4 min, until slightly browned. Add thyme; cook, stirring, 2 min. Add wine, stirring to loosen browned bits from bottom of pan. Cook 2-3 min. Add demi glace, stock, Worcestershire, and bay leaves; bring to a simmer. Cook 15 min.
     
  3. Preheat oven to BROIL with rack set 6-inches from top. Cook stock mixture 10 min while oven preheats.  
     
  4. Transfer soup to crocks; season with salt and pepper. Add 1/4 cup croutons to each crock; top with one slice cheese. Broil 4-5 min until well-browned and bubbling (watching carefully so as not to burn).
