Cauli-Leek Soup

Ingredients

Directions

  1. Preheat oven to 350 degrees. Trim leek roots and dark green ends; discard. Slice each leek in half lengthwise; cut crosswise into 1-inch pieces. Add to bowl of cold water; stir leeks to loosen any dirt. Remove with slotted spoon; drain.
     
  2. Place leeks and garlic cloves on foil sheet; drizzle with basting oil and season with salt. Bring short ends together; fold twice to seal. Fold and crimp sides to seal; leave room for steam. Cook 1 hour. Remove from oven; let cool slightly.
     
  3. Add leeks, garlic, and cauliflower puree to blender in two batches; puree until smooth. 
     
  4. Add puree and broth to stockpot; whisk to combine. Heat on LOW; simmer 20 min. Garnish with chives.
