Directions

  1. Heat oil in pan on HIGH until oil faintly smokes. (If oil smokes too much, pan is too hot.)
     
  2. Add garlic and carrots; stir fry 2 min.
     
  3. Add ginger and broth; bring to simmer.
     
  4. Add mushrooms and bok choy; simmer 3 min, until vegetables are tender.
     
  5. Add noodles; boil 6-8 min. Season with salt and pepper. Mix in green onions, chicken, and cilantro. Bring to simmer.
