6-8 qt slow cooker

Directions

  1. Dust all meat with pan-searing flour; set aside.
     
  2. Heat bacon in large braising pan on MEDIUM. Cook 3-5 min, until browned. Watch carefully so it doesn't burn. Remove bacon from pan; set aside.
     
  3. Brown meat lightly on all sides in bacon drippings, 5-8 min. Transfer meat and bacon to slow cooker.
     
  4. Add vegetables and garlic to braising pan. Cook, stirring, 3 min, until browned. Stir in oregano, nutmeg, and cinnamon.
     
  5. Add wine; stirring to loosen browned bits on bottom of pan. Cook 3-5 min, until reduced to syrupy consistency.
     
  6. Add tomatoes, vegetables, and stock to slow cooker (over meat). Cook on HIGH 4-6 hours or LOW 6-8 hours. Skim excess fat as needed.
     
  7. Remove shank and ribs; flake meat off bones. Return meat only to slow cooker. Adjust heat to HIGH (if using LOW). Stir in cream and basil. Cook 15 min.
