  1. Cook leeks in oil in large skillet on HIGH 1 min; stir in baby bella, shiitake, royal trumpet mushrooms, and garlic. Cook, stirring, 3 min. Stir in maitake mushrooms; cook 2 min. Stir in thyme.
     
  2. Add wine, stirring to loosen browned bits on bottom of pan. Cook about 4 min to reduce by half.
     
  3. Add chicken stock and creme fraiche. Season to taste with salt and pepper. Bring to boil; remove from heat immediately. Add parsley.
Options
Serve over Italian Classics Rigatoni or polenta.
